Description: Sweet And Sour Beancurd In Yam Basket
Ingredients: # 200g yam # 10g flour # A pinch of salt and sugar # 60g pineapple, sliced # 60g green bell pepper # 60g red chillies # 1 soft tofu # 10g oil # 100ml sweet and sour sauce (tong chou)
Sweet and Sour Sauce: # 80g white vinegar # 100g pin tong # 60g tomato sauce # 5 seen mui chee (sour plum, deseeded) # 30g Lea Perrins sauce # 2 slices lemon
Directions: o make the sauce, mix all ingredients for the sauce together and cook until sugar dissolves.
Steam yam and mash it. Mix with flour, salt and sugar, and shape into a basket. Deep-fry the yam basket (fatt put) until golden brown. Set aside.
Dice soft tofu and deep-fry till golden brown.
Stir-fry pineapple, green bell pepper and red chillies. Add fried tofu and sweet and sour sauce.
Place all the fried ingredients into the yam basket and serve.
